蕨菜,是可食用蕨類植物嫩卷芽的通稱。蕨菜在臺灣話稱為蕨苭(kueh-niau),常以國語轉寫為過貓。
常見的蕨菜包括歐洲蕨及其變種(Pteridium aquilinum (L.) Kuhnsub sp. Latiusculum (Desv.) Shieh)、烏毛蕨(Blechnum orientale Linn.)、腎蕨(Nephrolepis auriculata (Linn.) Trimen)、 水蕨(Ceratopteris thalictroides (L.) Brongn)、過溝菜蕨 (Anisogonium esculentum (Retz.) Presl)及廣葉鋸齒雙蓋蕨 (DiplaziumdilatatumBlume)等,其中以過溝菜蕨較為普遍 。[1]
